Known for its labor-intensive harvest, the piñas are carried by hand and mule over long distances before being cooked in an underground pit for three days. Distilled once by Maestro Mezcalero Eugenio Lopez Garcia using a “refrescadera,” this technique retains the wild essence of the plant.
