PECHUGA MEZCAL

Perhaps the most unique mezcal of all is Pechuga. Originating from the agave varietal Angustifolia, it is distilled a 3rd time with the breast of chicken or turkey and at least five fruits, including a base of banana, apple, pineapple, and orange with an interchangeable mango. Sometimes, the 5th fruit is swapped, or more fruits are added to play with the flavor profile. During distillation, the poultry (placed in a montera) never touches the liquid but only catches the vapors while transforming. Traditionally, Pechuga is created for festivals and religious ceremonies of great importance. The event's significance heavily impacts the specific ingredients and mixture used to make this extraordinary gift. When we first started traveling to Oaxaca, we were lucky to meet Maestro Mezcalero Gregorio Martínez García (Don Goyo). He generously shared his different mezcals and knowledge with us at his Palenque in San Baltazar. We dedicate this bottle to you, sir, and promise to keep your memory alive through the stories we love to share.
